Creating an Extra Anejo that has retained ample agave character but with an assertive oak profile may be one of the more difficult things to achieve in the spirits world. To do it you need the best of raw materials both agave and oak casks. The Fonseca family are widely regarded as experts in both and with five generations in Jalisco they have a deep respect for tequilas with soul and a sense of place. This is one of the finest Extra Anejos out there. On last tasting we found notes that reminded us of hazelnut infused dark chocolate, dried figs, bleuberry compote, preserved lime, Pineapple mint tea, nutmeg and campfire embers.
